Trim Fat vs. Suet Tallow: What’s the Difference?
When you see “beef tallow” on a skincare label, you might assume that all tallow is essentially the same. But there is an important detail that often gets overlooked: where the beef fat comes from before it is rendered.
Two of the most common sources are trim fat and suet. Both can be rendered into tallow, but they are physically different fats and can produce noticeably different results in the finished product.
At Udder Glow, I specifically choose 100% grass-fed beef suet for my tallow-based skincare. So let's break down what tallow actually is, where it comes from, and why I believe the source of the fat matters.
First, What Exactly Is Tallow?
Tallow isn't the raw fat straight from a cow. Tallow is rendered beef fat.
Rendering is the process of gently heating animal fat so that the fat separates from the surrounding tissue. The liquid fat is then strained before it cools into the firm, creamy substance we know as tallow.
The USDA defines tallow as the rendered fat from ruminant animals. Beef tallow specifically comes from cattle.
But here's where things get interesting: not all beef fat comes from the same place on the animal.
Narrowing It Down: Beef Tallow
A cow has several different types and deposits of fat throughout its body.
There is fat beneath the skin, fat surrounding muscles, fat associated with organs, and fat around the kidneys and loins.
The term suet specifically refers to the hard, dense fat surrounding the kidneys and loins. It is distinctly different from the softer fat that is trimmed from cuts of meat.
Once rendered, either type of fat can become tallow.
So you can have:
Trim fat → rendered → beef tallow
or
Suet → rendered → beef tallow
Both are technically tallow. But the starting material can make a difference in the finished fat.
Suet vs. Trim Fat: The Physical Difference
Suet
Suet is the hard, dense fat found around the kidneys and loin of cattle. It is naturally firm and has a very different texture from the softer fat found closer to the surface of the animal.
Its hardness isn't accidental. Suet has a relatively high proportion of saturated fatty acids, which contributes to its firm structure. Data compiled by the American Oil Chemists' Society show kidney fat (suet) containing substantially more stearic acid than subcutaneous beef fat.
Trim Fat
Trim fat is a much broader category. It generally refers to pieces of fat removed during butchering and meat fabrication. This can include fat from around cuts of meat and beneath the skin, and it can vary considerably depending on where it was trimmed.
Because trim fat comes from different areas and can contain more associated connective tissue and meat residue, the resulting tallow can vary in color, texture, firmness, and aroma depending on how it was rendered and refined.
Wet Rendering vs. Dry Rendering: Why the Rendering Method Matters
Choosing the right fat is only part of the story.
Once the fat has been sourced, how it is rendered can have a major impact on the finished tallow.
Two common methods are wet rendering and dry rendering. There are also differences in how extensively a tallow is subsequently filtered, deodorized, bleached, or otherwise refined.
At Udder Glow, I take a much simpler approach: low-and-slow dry rendering, followed by straining through unbleached cheesecloth.
What Is Wet Rendering?
Wet rendering involves heating the fat with water. The fat melts and separates from the water and other solids, and the rendered fat can then be collected and further purified.
One advantage of wet rendering is that it can help separate certain impurities from the fat. However, because water is introduced into the process, the rendered fat requires additional steps to remove moisture and impurities before it is ready for use.
The exact outcome depends on the temperature, duration, starting material, and subsequent purification steps. If any water is left, mold can grow quickly.
What Is Dry Rendering?
Dry rendering is a much simpler process and the better of the two (in my opinion).
Instead of adding water, the fat is heated gently until the fat itself melts and separates from the solid tissue.
This is the method I use at Udder Glow.
I dry render our grass-fed beef suet at a low temperature for an extended period of time, allowing the fat to slowly render without rushing the process.
Once rendered, the liquid tallow is carefully strained through cheesecloth multiple times to remove the remaining solids and impurities.
That's it.
No elaborate chemical processing. No artificial whitening process. No need to cover up the natural character of the fat.
Just carefully selected suet, low heat, patience, and thorough straining.
What About Bleaching and Deodorizing?
If you've ever compared different tallow products, you've probably noticed that they can look dramatically different.
Some tallow is naturally creamy or ivory-colored, while highly refined tallow can be extremely white and nearly odorless.
That's because rendering isn't necessarily the final step in commercial fat processing.
Depending on the manufacturer and intended use, commercially produced fats can undergo additional refining processes such as filtration, bleaching, deodorization, and other "purification" steps. These processes are commonly used in the broader fats and oils industry to modify color, odor, stability, and other characteristics.
“Bleaching” in this context doesn't necessarily mean household bleach. In oil refining, bleaching typically refers to the use of adsorbent materials to remove pigments and other compounds from fats and oils.
Deodorization is another refining process used to reduce volatile compounds responsible for natural odors.
These processes can produce a very white, very neutral-smelling fat.
But the more you process it, the farther you get from the original fat.
High-heat processing and chemical refining degrade delicate fat-soluble vitamins (like vitamins A, D, E, and K) and alter the natural fatty acid structure.
You may buy "pure" or "natural" skincare balms and unknowingly expose your skin to heavily processed industrial fats that cause irritation or allergic reactions.
Over the years at farmers markets, I’ve had quite a few people tell me they’ve tried tallow and ended up breaking out or having some kind of skin reaction. The first thing I always ask is, “Where did you buy it?” More often than not, they show me a product from Amazon labeled with a blanket term like “grass-fed tallow.” And if you’ve read this far, you know that “tallow” can mean very different things depending on how the fat was sourced and processed. What they thought was a reaction to tallow itself may have actually been a reaction to the type of fat used, the rendering method, or the additional processing it went through—such as high heat, bleaching, deodorizing, or other chemical treatments.
Why Does This Matter?
Think of tallow like any other ingredient: the finished product is influenced by both the raw material and what happens to it afterward.
You can start with different types of beef fat.
You can render them using different methods.
You can filter them to different degrees.
You can further refine them to change their color and aroma.
And you can combine the finished tallow with completely different oils and ingredients.
The result can be two products that are both labeled “beef tallow” but are surprisingly different.
That's why I ensure all the tallow I use for Udder Glow is 100% Grass-fed Beef Suet that has been dry rendered (low & slow), strained and cooled.
100% grass-fed beef suet → low-and-slow dry rendering → repeated cheesecloth straining → finished tallow.
This keeps the quality and integrity of the fat. Less is more.
Smell
One of the biggest reasons we choose suet is the smell.
Let's be honest: nobody wants their moisturizer to smell like beef.
Well-rendered tallow can be relatively neutral, but the aroma of the finished product depends heavily on the starting material, how cleanly it was rendered, and how thoroughly it was filtered.
Suet starts as a particularly clean, dense internal fat surrounding the kidneys and loin. It is naturally separated from much of the muscle tissue found elsewhere on the animal.
Trim fat, on the other hand, can have more contact with meat, connective tissue, and other materials that need to be separated during rendering.
This doesn't mean that every trim-fat tallow smells bad or that every suet tallow is completely odorless. Rendering matters enormously.
Consistency
The difference between suet and trim fat can also show up in the texture of the finished tallow.
Suet is naturally harder and firmer than many other beef fat deposits. Its fatty-acid composition contributes to this firmness. In particular, kidney fat has been measured as having a higher proportion of stearic acid and saturated fat than subcutaneous beef fat.
That doesn't mean suet tallow will always have exactly the same texture. Breed, diet, age, season, rendering method, and formulation can all influence the final product. Research has even found meaningful differences in beef-tallow melting behavior and fatty-acid composition among cattle breeds.
But as a starting material, suet gives a naturally rich, firm fat that works beautifully in whipped body butters and other skincare products.
And when I combine it with carefully selected oils and herbal infusions, it creates a texture that is rich and creamy without feeling greasy.
Nutrition Content & Fatty-Acid Profile
This is where things get especially interesting.
Tallow is composed almost entirely of fat, and beef fat contains a combination of saturated, monounsaturated, and smaller amounts of polyunsaturated fatty acids.
But the proportions aren't identical throughout the animal.
According to data compiled by the American Oil Chemists' Society, beef kidney fat (suet) contains approximately:
25% palmitic acid
29.2% stearic acid
33.5% oleic acid
1.5% linoleic acid
By comparison, a representative sample of subcutaneous beef fat (trim) contained approximately:
24.6% palmitic acid
11.1% stearic acid
46.6% oleic acid
1.7% linoleic acid
These numbers illustrate something important: fat from different parts of the same animal can have meaningfully different fatty-acid profiles.
What Does That Mean for Skincare?
It means “beef tallow” doesn't tell the whole story.
Two products can both honestly say they contain beef tallow while starting with different types of beef fat.
At Udder Glow, I care about that distinction because I don't simply want any beef fat. I specifically seek out 100% grass-fed beef suet as the foundation for my tallow skincare.
